Extra Creamy Lobster Mac and Cheese

In Celebration of National Lobster Day!

We’re excited to celebrate National Lobster Day by sharing this indulgent Lobster Mac and Cheese recipe. It’s cheesy, creamy, and loaded with tender lobster. To elevate this dish, we recommend using our Kaltbach Creamy Gruyere for an extra creamy gourmet version. Ingredients

Mac & Cheese

  • 8 ounces lobster meat (cooked, chopped), about 2 cups
  • 16 ounces cavatappi, penne, shells, or other medium pasta
  • ⅓ cup salted butter
  • ⅓ cup all-purpose flour
  • 1 teaspoon onion powder
  • ½ teaspoon dry mustard powder
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon Old Bay Seasoning
  • ¼ teaspoon black pepper (or to taste)
  • 2 ¾ cups milk
  • ½ cup light cream or half-and-half
  • 2 cups shredded sharp cheddar cheese
  • 1 ¼ cups shredded Kaltbach Creamy Gruyere (or Swiss, mozzarella, or havarti)
  • ½ cup shredded Parmesan cheese

Topping

  • ½ cup bread crumbs
  • 2 tablespoons melted butter
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon chopped fresh parsley (or ½ teaspoon dried parsley)

Instructions

  1. Preheat oven to 400°F and grease a 9x13 pan.
  2. Combine the topping ingredients in a small bowl and set aside.
  3. Cook pasta al dente according to package directions. Drain, run under cold water, and set aside.
  4. While pasta is cooking, melt butter over medium heat in a saucepan. Stir in flour, onion powder, mustard powder, salt, Old Bay, and pepper. Cook for 2 minutes.
  5. Slowly add the milk and cream, whisking continuously after each addition. The mixture will start thick but will smooth out as the liquid is added.
  6. Once all liquid is incorporated, bring to a boil, then reduce heat and simmer for 1-2 minutes until thickened.
  7. Remove from heat and whisk in sharp cheddar, Gruyere, and Parmesan until smooth.
  8. Combine the sauce with the cooked pasta, gently stir in half of the lobster meat, and spread the mixture into the prepared pan.
  9. Top with the remaining lobster and sprinkle the breadcrumb topping evenly.
  10. Bake for 20-25 minutes until bubbly and the topping is golden brown. Be careful not to overcook.
