Ingredients:

  • 2 cups plain flour
  • 1/2 tbsp active dry yeast
  • 1/2 cup warm water
  • 1 tbsp olive oil
  • 1/4 cup chopped green olives
  • 1/2 cup grated Manchego cheese
  • 1/4 tsp salt
  • 1/4 tsp sugar

Instructions:

  1. In a mixing bowl, combine the yeast, warm water, and sugar. Allow to sit for 5 minutes until frothy.
  2. Add the flour, salt, olive oil, olives, and Manchego cheese, and mix until a dough forms.
  3. Knead the dough on a floured surface for 5–7 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  5. Preheat your oven to 190°C (375°F). Punch down the dough, divide into small pieces, and layer them in a greased loaf tin.
  6. Bake for 20–25 minutes until golden brown and fragrant.
  7. Allow to cool slightly before pulling apart and savouring each cheesy, olive-filled bite!
